High Altitude Crumpets, English Muffins, Curds and Jams with Cortney - $100 per person
This class has a little bit of everything! Are you looking for a class that will help show you how to form perfect air bubbles and pockets to hold butter in your breakfast baked goods? Or how to get curds and jams to set at 6,500ft? Look no further – this is the class for you! Cortney will discuss how we’ve adjusted these recipes for our altitude, how you can adjust similar recipes and her 5 basic high altitude adjustments. Then we move onto jams and curds and why they won’t set at altitude, how to fix those problems and how to use her favorite pectin for perfect results every time. Cortney will even teach you how to make jams and curds by “ratio” and not recipe so that you can replicate them with any ingredients that you would like! This is a hands-on class. This class will be taught in our workshop format where you will work with a partner to make the recipes, but share the bounty! Each person will leave with 4 crumpets, 4 English muffins, a jar of curd and a jar of jam. This class is vegetarian.
