Ingredients
- 1 Lb. ground lamb
- 6 cloves garlic, rough chop
- 12 spanish olives, chopped

2 T. chiffonade mint
- 1 tsp cumin seed
- ½ tsp cinnamon, ground
- 1 tsp coriander, ground
- ½ c. panko
- 1 egg
- 1.5 tsp smoked paprika
- 3 T. carrot, grated and chopped

- 2 T. olive oil
- 1.5 C. Smoked Tomato Sauce
- Pinch crushed red pepper

Directions
Mix the lamb, garlic, olives, mint, cumin, cinnamon, coriander, panko, egg, smoked paprika, carrot, salt and pepper in a large bowl. Mix very well to incorporate all ingredients. Refrigerate 1 hour.
Heat a large pan over medium high heat on the stove; add oil. Scoop the meatballs out into 1 ounce balls and fry until a nice crust has formed. Flip over and cook another 2 minutes.
Add the tomato sauce (thin out with a little chicken stock or water if necessary) and the crushed red pepper flake to the pan. Cover and let cook for 4-5 minutes or until the meatballs are cooked through. Serve immediately.
