Ingredients
- 2 T. olive oil
- 1 onion, julienne
- 5 cloves garlic, smashed
- 2 T. tomato paste
- ½ C. sherry
- 8 smoked roma tomatoes

Directions
For the tomatoes: Soak woodchips for 30 minutes. Heat grill on medium-high heat. Drain woodchips. Place pan on the grill with some oil until smoking, add woodchips in an even layer. Close grill. Wait until woodchips begin to smoke. Once smoking, lay a piece of perforated foil over the woodchips. Place tomatoes on foil. Seal with foil. Turn grill heat to medium-low. Once smoking again, smoke for 15 minutes. Turn off heat, cool and remove.
- Heat the olive oil in a large saute pan on the stove. Add the onion and garlic and cook over medium heat for 5 minutes. Add the tomato paste, and cook until it starts to caramelize. About 3 more minutes. Deglaze the pan with the sherry and reduce until the alcohol evaporates. Add the smoked tomatoes and season with salt and pepper and cook for 1-2 minutes. Puree the mixture into a smooth sauce.
