Gumbo Workshop with Dave - $99 per person
EACH PERSON WILL BE TAKING 3-4 QUARTS TOTAL OF 2 TYPES OF GUMBO HOME – THAT’S ALMOST A GALLON OF GUMBO. FOR YOU. AT YOUR HOUSE! Now that I have your attention I’m just going to lay out the class. I’ll have a big pot of Gumbo made and ready to go… We’ll start class with a big bowl and a discussion about Cajun and Creole Cuisines and Gumbo History/Variations. After that we’re off to the studio to talk Roux and why I cook and stir mine for 3 hours straight. *Click Here to see the youtube video we made of Dark Cajun Roux Making.
Now it’s your turn. Following our Workshop format, we’ll break up into four groups with two groups making one gumbo variation and the other two groups making the second variation. When the Gumbo’s are made, we’ll divide them up evenly and each person will leave with at least a quart and a half of each Gumbo variation. This is a hands-on class taught in our 2 x 2 Workshop format.
On The Menu:
Dark Cajun Roux Discussion. The roux is the MOST IMPORTANT component of Gumbo. All other ingredients are secondary.
Chicken and Andouille Sausage Gumbo
Seafood Gumbo* (This Gumbo WILL contain Shellfish and Shellfish stock.)
