Mace, Whole – The outside casing of the nutmeg seed. From a tropical evergreen tree native to the Island of Run in the Spice Islands, Mace has a stronger flavor than nutmeg with notes of cinnamon and pepper. As the flavor of Mace is very pungent, it can be overpowering. Use in small additions for best results. Can be used whole or ground.
