Bacon Wrapped Pork Loin with Roasted Apples

Ingredients

1-1lb pork tenderloin
-
10-12 slices thin cut bacon
-
1-2 tablespoons rub of choice

Honey, to baste
-
Salt & Pepper to taste

3 apples, peeled, cored and cut into wedges

1 onion, rough chopped

2 teaspoons cinnamon or same rub from above

1 tablespoon olive oil

Directions
Preheat oven to 400°F.
Lay bacon strips on a sheet tray, overlapping the edges to make a “bacon blanket”. You can also weave the strips together, if desired.
Season pork loin with salt and pepper. In a pan over medium-high heat, sear pork on all sides, being careful to brown, but not cook the pork. Remove from pan and rub the pork with the seasoning.
Place the pork on the bacon blankets edge, closest to you, then roll away from you until it is covered. Place seam down on the pan.
Heat honey gently, just so that it is easier to work with. Gently baste bacon wrapped pork loin with honey. Place on sheet pan, surrounded by apples and onion and roast for 20 minutes. When done, let rest for 7 minutes.
Optional: If you have juice left on the pan, pour it into a small pan over medium high heat and reduce until thickened into a sauce. Season to taste and serve over pork.
