Szechuan Peppercorns

Szechuan Peppercorns are not a true Peppercorn. Native to China, Szechuan Peppercorns are berries that come from the Prickly Ash Shrub. A painstaking endeavor to collect, the prickly ash is very thorny and can cause very painful wounds. However, the flavor of these berries are worth the risk! Bright and Citrus-y, these berries also contain a phenomenon known as "Mala" or the sensation of a numbing effect. The interesting thing about Szechuan Peppercorns is the husks of the berry are what is sought after, and gives the numbing sensation. The seeds have little effect. Avoid Szechaun Peppercorns with black or very dark seeds - this may be an indication of old or lesser quality berries.
