Quick French Onion Soup
Quick is relative! Remember, true French onion soup can cook for 5-6 hours to develop the deep rich flavor. This recipe cheats and uses a few tricks to speed up the process.

Ingredients

4 large yellow or Vidalia onions, julienned

6 tablespoons olive oil

1 tablespoon sugar

1 tablespoon thyme, dried

2 quarts beef broth

½ cup brandy (optional)

1 French baguette, sliced and toasted

Shredded Gruyere and sliced Emmenthaler cheese as desired

Salt & Pepper, to taste
Directions
Slice onions, using a thin slice. In a large Dutch oven add enough olive oil to coat the pan and then add the onions. Cook over medium heat and cook for 12 minutes, until they're tender. Then remove the lid, add the sugar and continue to cook and let the liquid evaporate, until they begin to brown and caramelize.
Add the brandy if desired and let the alcohol burn off.
Add beef broth and thyme cover and bring to a boil. Reduce the heat and simmer for 12 minutes.
- 4. To serve, ladle soup into a bowl. Place a slice of baguette on top. Cover with shredded Gruyere and place slices of Emmenthaler over the very top.
Place the bowls on a baking pan and broil until the cheese is melted.
