The root veggies in these decadent pastry pockets add a little sweetness and a whole lotta heft to these hearty pies.

Ingredients

1 small onion, small dice

1 carrot, small dice

1 celery rib, small dice

3 cloves garlic, minced

1 # ground pork, lamb or beef

3 tablespoons tomato paste

1 cup Guinness
-
3 tablespoons flour
-
2 ½ cups beef stock
-
½ cup potatoes, small diced and blanched
-
½ cup parsnips or turnips, small diced and blanched

2 teaspoons Worcestershire sauce

1 teaspoon dried thyme or 2-3 sprigs fresh, stripped

½ teaspoon horseradish
-
Salt and pepper, to taste

2 eggs, beaten
-
2 x recipe pie dough, homemade or storebought
Directions
In a saute pan over medium heat, saute the ground meat, onion, carrot, celery, and garlic until meat is cooked through, making sure to season well with salt and pepper.
Add the tomato paste and cook slightly (being careful not to burn it to the bottom of the pan). When the paste is toasted, deglaze the pot with the Guinness, scraping up anything that stuck to the bottom.
Then add the flour and reduce heat to medium low and cook out the starches.
Next add the beef stock, Worcestershire, potatoes and turnip/parsnip. Bring to a boil and then reduce to a simmer. Simmered for 20-30 minutes or until it has thickened and reduced slightly. Add the thyme and horseradish. Continue to let simmer until the mixture has thickened, but it will still be a little loose. Season with salt and pepper. Let cool.
Preheat oven to 375 degrees.
Divide the dough into 8 equal sized pieces (if using the pre-rolled storebought, cut into 5.5” circles). Roll each piece into a 5.5” circle.
Brush the edges with egg wash. Place the meat mixture in the dough and fold over in a half circle. Using a fork, crimp the folded edges. Place onto a lined baking sheet. Brush with beaten egg.
Bake for 12-16 minutes, or until brown and cooked through. Enjoy!
