Serve this dip up with colorful veggies for a more interesting and exciting presentation.
¾ C. lemon juice
2/3 C. tahini
3 cloves garlic
6 T. olive oil
3 cans chickpeas, drained, aquafaba saved
7-9 T. aquafaba to thin to desired consistency
Salt and pepper
Za’atar – either mix some in, or just sprinkle on top as a garnish.
In a food processor, combine the lemon juice, tahini, garlic, and olive oil. Blend until smooth. Scraping the sides once or twice.
Add the chickpeas and continue to blend. Add the aquafaba as necessary to thin out to desired consistency, scraping the bowl down a few times to ensure there are no lumps.
Season with salt and pepper and add za’atar if desired or use as a garnish.
