Ingredients

1 cup quinoa, cooked

12 ounces baby spinach, hard or long stems removed

1 avocado, diced

1 cucumber, 4 ribbons of peel removed, leaving some on, then sliced into rounds

4 ounces mukimame (this is edamame without the shell) or green beans, blanched

1 green apple, peel on, diced

¼ cup walnuts or pumpkin seeds, toasted & chopped

½ cup feta cheese
-
¼ cup Greek yogurt
-
¾ cup buttermilk
-
½ cup parsley, rough chopped

¼ cup tarragon, chopped
-
¼ cup chives, chopped
-
¼ cup spinach leaves
-
2 tablespoons lemon juice
-
¼ lemon, zested
-
2 anchovies or 1-2 teaspoon anchovy paste, to taste
- 1 garlic clove, mashed

Directions
Cook quinoa according to directions and cool. For 1 cup cooked quinoa: Bring 1 cup water to a boil, then add ½ cup quinoa and a pinch of salt. Reduce heat, cover and cook for 10-15 minutes.
Place all dressing ingredients into a blender or small food processor and puree until totally smooth.
Toss quinoa with a little of the dressing.
Place greens (spinach) in the bottom of the bowl. Make heaping mounds of quinoa, avocado, cucumber, mukimame and apple. Drizzle with dressing and sprinkle with feta and nuts.
Recipe Note
Anchovy paste makes the umami flavor of the Green Goddess Dressing. You can usually find it in any grocery store, generally in the same aisle with the canned tuna.
