Ingredients

1.5 c. corn meal

½ c. flour

Pinch of salt & pepper

½ c. sugar
-
½ T. baking powder
-
½ c. melted butter
-
2 c. buttermilk
-
2 eggs
Directions
In a large bowl, mix together the corn meal, flour, sugar, and baking powder.
When combined, add the melted butter, buttermilk, and eggs. Stir together to incorporate. Season with salt and pepper.
Pour batter evenly in a preheated, greased muffin pan. Bake at 400deg for 20-25 minutes – OR Pour batter into a preheated, greased baking pan. Bake for 25-30 minutes or until a toothpick inserted in the middle comes out clean.
Recipe Note
Cortney also loves making this cornbread in the pressure cooker, for a softer texture. Simply follow steps 1-2 of our recipe and then:
Pour batter in a deep greased pan and cover tightly with foil. Place 1 cup of water in the bottom of the pressure cooker. Place a rack into the pressure cooker. Prepare a foil sling and place pan on rack.
Cook on high pressure for 30 minutes. Let pressure naturally release and remove.
