This delicious veggie burger is hefty, satisfying and delicious!

Ingredients
For the burger
-
1 x 14 oz. can black beans, drained and rinsed
-
½ C. corn kernels, frozen – thawed
-
2 T. mayonesa
-
2 tsp. gather baja seasoning, (or your favorite chili powder)
-
¼ C. ranchero or queso fresco, crumbled
-
3 T. cilantro, chopped
-
1 egg, beaten
-
1 C. panko
-
2 garlic cloves, minced
-
Salt and pepper
-
2-4 buns, of choice
-
Lettuce, any
-
Slicing tomato
-
Ripe avocado, sliced
- · ½ C. crema
For the chipotle crema
-
1-2 chipotle peppers, mashed
-
Zest of ½ lime
-
½ tsp. cumin ground
-
Salt
-
Pepper
Directions
Add the black beans, corn, mayonesa, and baja seasoning together in a food processor. Pulse to combine but leave a bit coarse. Transfer to a bowl and add the queso, cilantro, egg, panko, garlic, and salt and pepper. Refrigerate
Make the crema by combining the crema, chipotle, lime zest, cumin, and salt and pepper.
Patty out veggie burgers to desired size. Refrigerate.
Preheat griddle or foil grill over medium heat.
Lightly oil the surface of the griddle or foil the grill and add the bean patty. Brown on both sides until heated through. Add some queso fresco to the top of the patty about 2 minutes before it is finished cooking.
Lightly oil buns and grill/griddle.
To assemble, crema on top and bottom buns, then patty with queso. Top with tomato, avocado slices, lettuce, then top bun.
Recipe Note
Cortney loves this burger with a little pepperjack cubed and added to the patty - because cheese!
