Elote Style Black Bean Burgers

Ingredients

For the burger

• 1 x 14 oz. can black beans, drained and rinsed

• ½ C. corn kernels, frozen – thawed

• 2 T. mayonesa

• 2 tsp. gather baja seasoning, (or your favorite chili powder)

• ¼ C. ranchero or queso fresco, crumbled

• 3 T. cilantro, chopped

• 1 egg, beaten

• 1 C. panko

• 2 garlic cloves, minced

• Salt and pepper

• 2-4 buns, of choice

• Lettuce, any

• Slicing tomato

• Ripe avocado, sliced

• ·       ½ C. crema

For the chipotle crema

• 1-2 chipotle peppers, mashed

• Zest of ½ lime

• ½ tsp. cumin ground

• Salt

• Pepper
