Ingredients

1 ½ # chicken thigh, cut into strips

1/3 C. coconut milk

3 T. fish sauce

1 tsp. turmeric, ground

2 T. palm sugar

1 lime, juiced

2 T. chili sambal
-
2 tsp. ginger, minced
-
½ C. peanut butter, chunky
-
½ C. hoisin sauce
-
1/3 C. coconut milk
-
1 T. fish sauce
-
½ lime, juiced
-
1 T. chili sambal
-
2 tsp. rice vinegar, unseasoned
-
1 tsp. ginger, microplaned
-
1 T. honey
For The Skewers
For The Peanut Sauce
Directions
Combine the coconut milk, fish sauce, turmeric, palm sugar, lime juice, chili sambal, and ginger in a bowl. Add the chicken and let marinate 2 hours to overnight
Make the peanut sauce by combining the peanut butter, hoisin, coconut milk, fish sauce, lime juice, chili sambal, rice vinegar, ginger and honey. Stir well to combine.
Skewer the chicken evenly between 8 skewers. Cook using desired method – roast, grill or pan sear! When skewers are cooked, remove to a plate and serve with the peanut sauce.
