White Pizza with Mushrooms, Fresh Garlic & Herb Oil

Ingredients

½ cup extra virgin olive oil, plus 1 tablespoon

1 tablespoon Gather Italian seasoning (or dried parsley, oregano & basil)

Salt & Pepper to taste

Optional: Pinch of red pepper flakes

4 cloves garlic, minced

6-8 ounces mushrooms, sliced

1 cup shredded mozzarella

Slices or small balls of fresh mozzarella

Optional, Italian Seasoning to sprinkle

Optional: Sausage

1 recipe pizza crust or 1 premade pizza crust

Directions
In a bowl, mix together the oil, Italian seasoning, salt, pepper and red pepper flakes. Set aside.
Stretch pizza crust and dust bottom or the baking pan with semolina. Build the pizza by generously brushing with herbed oil, sprinkle with garlic, then sprinkle with half of the shredded mozzarella. Add remaining oil to the mushrooms and toss.
Top dough with mushrooms. Add remaining mozzarella to the top. If desired, brush the crust with olive oil and sprinkle with Italian seasoning. If using sausage, add here!
Bake at 500 degrees for 10-15 minutes or until crust is golden brown.
