Ingredients
For the Cake

½ cup butter, softened

1 cup sugar

2 eggs
-
1 teaspoon vanilla

1 ¼ cup all-purpose flour

1 teaspoon baking powder

1 teaspoon Gather Holiday Baking Spice or Apple Pie Spice

¼ teaspoon salt

2 apples, peeled, cored and small dice

½ cup walnuts
For the Spiced Whipped Cream
- For the Spiced Whipped Cream:

1 cup heavy cream
-
1 tablespoon sugar
-
1 teaspoon Holiday Baking Spice or Apple Pie Spice
Directions
Preheat oven to 350 degrees. Grease and parchment a 9 x 9 cake pan.
In a medium bowl, sift together flour, baking powder, holiday spice and salt. Set aside.
In a large bowl or with a mixer, beat butter and sugar on medium speed until light and fluffy. Beat in eggs, one at a time. Add vanilla.
On low speed, slowly add in dry ingredients. Stir in apples and walnuts. Spoon into pan.
Bake for 40 – 45 minutes, checking at 30 minutes. While cake is cooling, beat heavy cream, sugar and holiday baking spice together until peaks form.
Serve cake topped with Spiced Whipped Cream.
