Making your own brine blend is simple and easy! This recipe makes enough brine for a 14lb turkey.

Ingredients
- ¾ cup kosher salt

¾ cup sugar

2 bay leaves
-
1 tablespoon peppercorns

1 tablespoon coriander seeds

1 tablespoon dried orange peel (add fresh if you don’t have dry)

¼ teaspoon red pepper flakes

¼ teaspoon fennel seeds

2 star anise
-
1 teaspoon dried thyme
Directions
In a 16-quart or larger stockpot, bring 2 gallons of water to boil. Add brine blend and stir to dissolve. Cool.
Remove giblets and neck from turkey, reserve for another use. Add turkey to the cooled brine solution (use brining bags, a bucket or cooler). Refrigerate the turkey for 24-48 hours, then remove from the brine, rinse and pat dry.
Cook turkey as instructed/desired.
