Ingredients

1/2 c. red wine vinegar

1 clove garlic, chopped fine

2 sprigs thyme, stripped

1 tablespoon Gather Greek Seasoning

1 T. honey
-
1.5 c. oil
-
Salt and pepper
-
1 pound chicken, boneless, skinless, cut into large pieces

1 green bell pepper, cut in large pieces
-
1 red onion, cut into 8 pieces
For the Greek Vinaigrette (Divided)

Directions
Soak the skewers in water for 30-45 minutes.
Mix together all vinaigrette ingredients. Reserve ¼ of the vinaigrette for the vegetables.
In a bowl, combine the remaining marinade with the chicken. Let marinate 2 hours – overnight.
Skewer the chicken, taking caution to not overcrowd the skewers, set aside. Next skewer the onion and bell pepper on separate skewers. Brush the onion and bell peppers with the remaining vinaigrette.
Cook on medium high heat in a saute pan or a flat griddle. These also work great on a grill. Remove from skewers and serve with pita and tzatziki.
