This simple dip has two of my favorite things! Eggplant and sumac. Try it with fresh sliced veggies or pita bread for a great take-a-long recipe!
· 4 roasted red peppers
1 small eggplant, roasted & skin removed
2 tablespoons green onion, chopped
2 tablespoons olive oil
1 tablespoon sumac
4 cloves garlic, smashed
Juice of 1/2 a lemon
1-2 tablespoons red wine vinegar
1/2 tablespoon sugar
Combine all ingredients in a blender or food processor and process until desired consistency. Check for seasoning.
