In-Cider Information with Dave
Raise your hand if you thought apple cider was just for drinking. Ok, now put your hand down because you look silly and no one around you knows why your hand is raised. Seriously though, using apple cider as an ingredient for both sweet and savory dishes/preparations is a great way to get clean, apple only flavor as cider is nothing more than fresh pressed apples into juice without any added sugars. The wonderful, pure apple flavor that you get on meats, vegetables, and desserts will make you wish that the harvest will never end! This is a hands-on class. This class is taught in our 2x4 format – we’ll split up into groups of 2 and each twosome will tackle one recipe.
On the menu:
- Cider Marinated & Smoked Duck Breast with a Rainbow Chard Salad, Candied Almonds, crumbled Gorgonzola, Cornbread Croutons and an Apple Cider Vinaigrette
- Apple Cider Donuts with Maple Sugar`- an oldie but a goodie
- Apple Cider Crisp with Cider Caramel
- Apple Cider Brined Pork Tenderloin with Bourbon, Peppercorn, & Cider Glaze
