Everybody Loves Ramen with Dave - $75 per person

There are four main components to Ramen; the noodles, the broth, the tare, and the toppings. This month we’ll discuss and use 4 different ramen broths. Please note that there are as many different ramen broths as there are people on earth. This is not a complete list!

The broth in a bowl of Ramen is its “lifeblood”. Every good bowl of Ramen starts with an excellent broth and from your first taste lets you know so much about what you are about to eat. There are endless ways that these broths can be prepared and in this class we are going to see what all they can do! This class is taught in our 2x4 format – we’ll split up into groups of 2 and each twosome will tackle one recipe. This is a hands-on class.

On the menu:

  • Soy Sauce Broth (Shoyu) – BBQ Pork, Pickled Bamboo
  • Salt (Shio) – Pork Broth, Roast Pork, Shitake Mushroom
  • Miso (Miso) Shiro Miso Broth – Chicken, Bean Sprouts, Scallion, Ramen Egg
  • Other (Chili Oil/Stock Broth) – Fermented Broad Beans, Tianjan Chili, Tofu, Fish Cake, Szechuan Peppercorns
