Too Cool For School: We Come from a Land Down Under with Dave
As the title implies, this oddly specific class is about fish that we eat that are mostly solitary. We did Catfish in June, and it was a blast. So fun that we’re doing it again but with different fish. In this next edition of TCFS we’re switching hemispheres and looking at fish from Australia (and Tasmania). Have you ever had Barramundi or Orange Roughy? Well, regardless of if you have or haven’t, if you like fish, you should be here. And of course, there’ll be something “On the Barbie”. This class is taught in our 2x4 format – we’ll split up into groups of 2 and each twosome will tackle one recipe.
On the menu:
- Seared Barramundi with Brown Butter Meuniere
- Grilled Barramundi with Grilled Corn and Watermelon Salad
- Citrus Crusted Orange Roughy
- Orange Roughy with Za’atar and Tomato, Olive, Caper Sauce
