The roots of this spice blend can be traced back to the 1600’s, where it was first made by herb and spice traders in Tokyo. First sold in pharmacies, the first use for Shichimi Togarashi was medicinal, not for culinary. That came later after street vendors realized they could jazz up their dishes with this amazing blend!
Togarashi itself means Peppers, and there are three different types of Togarashi: Shichimi, Nanami, and Ichimi. Shichimi meaning “seven flavors” and Nanami meaning “seven seas” are essentially the same seasoning but with the same 7 ingredients in different ratios – most notably the orange peel ratio between the two. Ichimi Togarashi is just the peppers without the other seasonings.
The ingredients for Togarashi vary regionally and even by household! The most common found ingredients in Togarashi are: Orange (satsuma) peel, sesame seeds, chili peppers, ginger, nori, poppy seeds, Sichuan peppercorns, black sesame seeds, Japanese chili pepper, and hemp seeds. The blending at that point becomes the masterpiece of the creator!
Shichimi Togarashi is a fun blend for all levels of cooks because it is very easy to balance with other flavors and even cuisines! Hints from a chef: the orange peel will help balance out fatty meats and the nori sheets provide that “umami” that everyone so desperately seeks, and don’t forget about the little bit of heat from the peppers! Speaking of peppers – this blend adds a pop of spice, and is great when used as a sprinkle over the top of noodle dishes, stir frys, and soups.
